Ingredients:
1. 3 TBSP olive oil 2. 2 cups couscous 3. 1 1/4 cups of water 4. 1 cup low-sodium chicken broth 5. 2 grated carrots 6. 1/2 tsp. ground cinnamon 7. 1/4 cup pine nuts Makes 10 servings Directions: 1. Heat oil over medium-high heat. Add grated carrots and cinnamon; cook, stirring frequently until carrots are softened, about 2 minutes. Add water, couscous, and chicken broth. Stir briefly to combine. Bring to a boil. Cover and remove the pan from heat. Let stand until grains are tender, about 7 minutes. 2. While couscous is cooking. Toast pine nuts in a dry saucepan until lightly brown. 3. Uncover couscous and fluff with a fork. Add pine nuts. Serve warm.
