Rockin’ Recipe – Crispy Zucchini Fries

Ingredients:

  • 1 TBSP olive oil
  • 1 pound zucchini
  • 1/4 cup flour
  • 1 cup seasoned Panko Crumbs
  • 1/4 cup Parmesan Cheese
  • 2 eggs

Directions:

  1. Preheat oven 425. Line baking sheet with aluminum foil and brush with olive oil
  2. Wash and cut zucchini into 4-inch slices
  3. Measure 1/4 cup flour into a bowl and add zucchini to coat
  4. Measure breadcrumbs and parmesan cheese into a bowl and whisk 2 eggs together in a separate bowl
  5. Dip one zucchini piece into egg mixture then roll into breadcrumbs and place onto a baking sheet
  6. Bake 20-25 minutes. Flipping zucchini fries halfway.

Let cool and enjoy!
