Baked Chicken Nuggets

  • 4 large boneless, skinless chicken breasts
  • 2/3 cup unseasoned dry breadcrumbs
  • 3 T. cornstarch
  • 3 T. grated Parmesan cheese
  • 1 t. dried basil
  • 1 t. dried oregano
  • 1/4 t. garlic powder
  • 1/2 t. ground thyme
  • 1/2 t. onion powder
  • 2 cloves garlic, minced
  • 1 Tbsp. lime juice
  • salt and pepper
  • Olive oil or cooking spray

Honey-Mustard Sauce:

  • 1/4 cup Dijon mustard
  • 3 T. honey

Directions:

  1. Prepare breadcrumbs and set them aside.
  2. Cut chicken into 1-inch pieces.
  3. Toss tenders with garlic, lime juice, and salt and pepper to taste. Marinate for about 10 minutes.
  4. Spread tenders in a single layer and lightly mist with olive oil. Turn and mist the other side. Roll tenders in breadcrumbs to coat. Arrange in a single layer on a baking pan lightly misted with olive oil or cooking spray.
  5. Bake at 500 degrees for 5 minutes. Turn and bake for 2 more minutes until juice runs clear when chicken is pricked with a fork.
  6. Serve with your favorite barbecue or honey mustard sauce.
