Ingredients:

  • 2 cups spinach
  • 8 carrot coins
  • 8 cherry tomatoes
  • 4 beets, sliced
  • ¼ cup garbanzo beans
  • 1 Tbsp cashews
  • 2 Tbsp balsamic vinaigrette

Directions: 

  • 1) Place spinach in a bowl.
  • 2) Top with carrot coins, tomatoes, beets, garbanzo beans, cashews and dressing.
  • Serves: 2
