- 1 red bell pepper, cut into 1-inch strips
- 1 yellow bell pepper, cut into 1-inch strips
- 3 tomatoes, diced
- 1 small onion, chopped
- 1 garlic clove, finely chopped or minced
- 1 Tbsp lemon juice
- 1 Tbsp red wine vinegar
- 1 Tbsp olive oil
Directions:
- Combine peppers, tomatoes, onions, garlic in a bowl
- Pour lemon juice and vinegar over pepper mixture
- Drizzle olive oil
- Toss with tongs to mix and serve
