Wellsville Rockin’ Recipe – Tasty Potato Soup
- 1/2 cup chopped carrots, diced
- 1/2 cup chopped celery, diced
- 1 1/2 cups mashed potatoes
- 1 baked potato, diced
- 1/2 cup fat-free milk
- 1 can fat-free chicken broth
- 1 garlic clove, minced
- 1/8 tsp black pepper
- 1/2 cup light sour cream
Directions:
- Place mashed potatoes in a saucepan. Gradually add broth and milk, whisking until smooth. Add carrot, celery, garlic, pepper, and diced potatoes.
- Bring to a boil; reduce heat. Simmer uncovered, 20 minutes
- Remove from heat; stir in sour cream
