Rockin’ Recipe – Crispy Zucchini Fries
Ingredients:
- 1 TBSP olive oil
- 1 pound zucchini
- 1/4 cup flour
- 1 cup seasoned Panko Crumbs
- 1/4 cup Parmesan Cheese
- 2 eggs
Directions:
- Preheat oven 425. Line baking sheet with aluminum foil and brush with olive oil
- Wash and cut zucchini into 4-inch slices
- Measure 1/4 cup flour into a bowl and add zucchini to coat
- Measure breadcrumbs and parmesan cheese into a bowl and whisk 2 eggs together in a separate bowl
- Dip one zucchini piece into egg mixture then roll into breadcrumbs and place onto a baking sheet
- Bake 20-25 minutes. Flipping zucchini fries halfway.
Let cool and enjoy!
