Lemon Garlic Chicken & Roasted Vegetables

Ingredients

  • 2 chicken breasts, sliced

  • 2 cups broccoli florets

  • 2 carrots, sliced

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • Juice of 1 lemon

  • Salt & pepper

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Toss vegetables with olive oil, salt, and pepper.

  3. Spread on a sheet pan and place chicken slices among vegetables.

  4. Sprinkle garlic and drizzle lemon juice over everything.

  5. Roast 20–25 minutes until chicken is cooked through.
