Recipe Description
- 8 oz whole-wheat penne
- ¼ cup broccoli
- 1 medium carrot, chopped
- ¼ cup peas
- ¼ cup yellow pepper
- ¼ cup tomato, chopped
- ¼ cup parmesan cheese
- 1 Tbsp olive oil or for more flavor red wine vinegar
Directions:
- Cook pasta for about 5 minutes, then add the broccoli, carrots, and peas to boiling water and cook an additional 4-5 minutes.
- Drain pasta and veggies.
- Top with tomatoes, olive oil, and parmesan cheese
