  • Groovy Pepper and Tomato Salad1 red bell pepper, cut into 1-inch strips
  • 1 yellow bell pepper, cut into 1-inch strips
  • 3 tomatoes, diced
  • 1 small onion, chopped
  • 1 garlic clove, finely chopped or minced
  • 1 Tbsp lemon juice
  • 1 Tbsp red wine vinegar
  • 1 Tbsp olive oil

Directions: 

  1. Combine peppers, tomatoes, onions, garlic in a bowl
  2. Pour lemon juice and vinegar over pepper mixture
  3. Drizzle olive oil
  4. Toss with tongs to mix and serve
